Ingredients:
- 1 pound ground beef (or chicken, turkey, or pork)
- 2 TBS chili powder
- 1 TBS cumin
- 1 tsp onion powder (or use some onion--I don't like biting into onion so I use the powder)
- 2 pinches red pepper flakes
- 2 dashes hot sauce
- 8 oz. tomato sauce
- 2 cans pinto or black beans (or 2 cups of fresh cooked beans)
- 1 cup beef stock (or chicken or vegetable or even water)
- 1 red bell pepper, finely chopped
- 1-2 cloves garlic, minced
- salt and pepper to taste
- burrito-size tortillas
- 2 cups fritos (any flavor--I use the plain ones from Trader Joe's)
- 2 TBS olive oil
- other toppings (cheese, sour cream, salsa, guacamole, etc.)
Method:
- Heat oil on med and add bell pepper and garlic (and onion if you're using it), saute for a few minutes
- Add beef and brown thoroughly
- Mix in spices
- Add beans and stock and bring to a bubble
- Lower heat, cover, and simmer for 10-15 minutes
- Add corn chips, breaking up slightly
- Put a serving spoonful in the center of tortilla, add toppings of your choice, and roll
