Frito Burritos

Growing up, these were referred to as "Gringo Burritos" in my house because it's the way my Caucasian grandmother used to make burritos. When we were first married, I made these a lot. I don't make these very often, but, man, they are tasty!!! And since I use my own homemade chili, its a little healthier than the way I used to make them (with canned). If you want to make this super fast and easy, buy a can of vegetarian chili, add the ground meat of your choice, and add the Fritos and viola: Frito Burritos!

Ingredients:
  • 1 pound ground beef (or chicken, turkey, or pork)
  • 2 TBS chili powder
  • 1 TBS cumin
  • 1 tsp onion powder (or use some onion--I don't like biting into onion so I use the powder)
  • 2 pinches red pepper flakes
  • 2 dashes hot sauce
  • 8 oz. tomato sauce
  • 2 cans pinto or black beans (or 2 cups of fresh cooked beans)
  • 1 cup beef stock (or chicken or vegetable or even water)
  • 1 red bell pepper, finely chopped
  • 1-2 cloves garlic, minced
  • salt and pepper to taste
  • burrito-size tortillas
  • 2 cups fritos (any flavor--I use the plain ones from Trader Joe's)
  • 2 TBS olive oil
  • other toppings (cheese, sour cream, salsa, guacamole, etc.)

Method:
  • Heat oil on med and add bell pepper and garlic (and onion if you're using it), saute for a few minutes
  • Add beef and brown thoroughly
  • Mix in spices
  • Add beans and stock and bring to a bubble
  • Lower heat, cover, and simmer for 10-15 minutes
  • Add corn chips, breaking up slightly
  • Put a serving spoonful in the center of tortilla, add toppings of your choice, and roll
